“Before there was a menu, there was a memory.”
That’s how the family that is opening a new restaurant in Greenville describes their undertaking.

They grew up in Chicago.
“Great food wasn’t just something you ate; it was part of who you were,” they said on their Facebook page. “Summer afternoons at the neighborhood hot dog stand. Italian Beef dripping with gravy. The crunch of real giardiniera. The places everyone knew and the meals you never forgot.”
That’s what has driven them to open Wolfie’s Drive-Thru on Wade Hampton Boulevard, the former site of Fratello’s Italian Restaurant & Pizzeria.
They have not released their names on their inventive social media, teasing that Wolfie’s is a take on their name and asking people to guess. One person guessed Wolf. Another Wilk (Polish for wolf).
They did offer a hint if you want to do some digging. They said on Instagram their executive chef is Chef Russell Bry.
When you Google him, you end up at Coop’s Crazy Chicken, “a culinary venture brought to life by the dynamic father-daughter duo, Dave and Tessa Wolfgram.”

Wolfgram has a long history in the restaurant business in Chicago and San Francisco. Is he the mastermind behind Wolfie’s? Who knows? They’re not responding to requests for more comment, as of Sept. 10.
The opening date has not been announced. They are doing some renovation and completing required permitting.
But here’s what they promise: a Chicago dog they call an icon.
“This ain’t your backyard hot dog,” they said. “Bright. Crunchy. Salty. Spicy. And somehow, it all works together perfectly.”
They also have the Maxwell Street Style Polish — grilled Polish sausage, grilled onions, yellow mustard.

They’re also serving Italian beef and have a tutorial on how to order.
DRY: Beef is pulled out of the gravy and placed directly onto the bread
WET: Extra gravy is ladled onto the sandwich
DIPPED: The whole sandwich is dunked into the gravy
“There’s no wrong answer,” they say.
And they have burgers.
